Dry ingredients:
3 c. flour
1 c. pecans
1 tsp. cinnamon1 tsp. baking soda
1 tsp. salt
3 c. chopped, peeled fresh apples (I love Granny Smith apples in this cake)

Wet ingredients:
2 eggs
1 1/4 c. oil
2 c. sugar
1 tsp. vanilla

Preheat oven to 325. mix dry ingredients in large bowl and set aside. Mix wet ingredients until all ingredients are well incorporated. Mix wet with dry in large bowl. Bake in preheated oven @325 degrees in greased bundt pan (or no stick baking spray) for 1 hour or a little longer, depending on the oven.
