3 or 4 lbs Chuck Roast
1 red bell pepper
1 orange or yellow bell pepper
1 medium yellow onion
10 cloves of garlic
1 cup of low sodium chicken broth
½ cup of dry white wine
1 6 oz can of green pitted olives
1 6 oz can of tomato paste
1 14.5 oz can of crushed tomatoes
1 14.5 oz can diced tomatoes
2 tsp. Dried oregano
1 bay leaf
1 tsp. White wine vinegar
1 tsp. Salt

Directions:

Dice onions and bell peppers, trim fat off meat.

Peel and chop garlic cloves or used minced garlic.

Add meat to crock pot.

Pour tomato paste, crushed tomatoes, diced tomatoes, onions, bell pepper, garlic, chicken broth, white wine and spices over the meat.

Cook one high for 6 hours, stirring occasionally.

Half the olives and add to crock I pot with white wine vinegar. Cook ion low for another hour.

Use two forks to shred meat, then place back in stew. Serve over rice.
