3 1/3 cups all purpose flour
3 cups sugar
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 can (15 oz) pumpkin puree (not pie filling)
1 cup oil
4 eggs
2/3 cup water
1/2 cup chopped pecans

Directions:

Mix together dry ingredients. Combine pumpkin, oil, eggs and water. Add to dry ingredients. Fold in pecans. Spoon into 2 greased loaf pans and bake at 350º for 60-65 min. until toothpick comes out clean. Cool in pans 10 min. Remove and cool on a wire rack.
For glaze combine 1/4 cup butter, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 cup whipping cream in a sauce pan. Cook until sugars dissolve. Cool for 20 min. before stirring in 2/3 cup powdered sugar and 1 tsp vanilla. Drizzle over loaves.
