2/3 cup oil
2 eggs
2 Tbsp chopped pickled jalapenos
1 small can cream corn, about 1/2 cup
1/2 cup chopped yellow or sweet onion
1 cup sour cream
1 1/2 cup self rising cornmeal mix (White Lily)
1 cup grated sharp cheddar cheese

Directions:
Directions:
Grease a 10 in iron skillet with about a Tbsp shortening and place in the oven while you heat it to 425º. Mix everything except cheese. Pour 1/2 batter into heated skillet, sprinkle with half the cheese and then top with the rest of the batter and cheese on top. Bake for 30 min or until toothpick comes out clean.
