½ c. (1 stick) butter, melted
½ c. white sugar (or less)
2 eggs
¾ c. corn meal
1 c. GF flour
½ tsp. salt
1 tsp. baking soda
1½ tsp. xanthan gum
½ c. buttermilk

Directions:
Directions:
Preheat oven to 375 degrees F (or 400 degrees for Convection).

In a mixing bowl, combine all ingredients to blend. Place in a greased 8 x 8" pan and bake at 375 for 15 min. or until it tests done with a toothpick.

Very good! Easily doubled for 9 x 13" pan.
