2 cups flour
⅓ cup shortening or margarine
⅓ cup sugar
½ cup orange juice
dash of salt

1 lb. Ricotta cheese
½ cup milk
1 cup sugar
3 eggs
1 tsp vanilla
1 cup cold rice


Directions:
Directions:
Prepare the crust:
Mix flour, sugar and salt together
Work in shortening until it looks like cornmeal.
Make a well and add the juice
Work the dough until it can be handled. Add more flour if needed
Roll out onto a floured board, then place into pie plate

Prepare the filling:
Cream the Ricotta with milk and sugar.
Add the eggs, vanilla and rice.
Mix well

Pour filling into crust, bake in 350º oven for 1 hour
