1 lb. Chicken tenders are thawed, cut into strips, and then pieces.
Salt
Pepper
Garlic
Corn Starch
Baking Powder

1/2 Onion, sliced and coarsely diced
4 t. Frozen Ginger
6 cloves of garlic
4 T. Soy Sauce
2 T Honey
1/8 t. red pepper flakes
6 whole dried red peppers
1/4 C. Better than Bouillon mixed 4X strength
4 T. Vegetable Oil
1 C. Rice, uncooked, 2 1/4 C. cooked with 1 t. salt.

Thaw the tenders and dry them.
Season with salt, pepper, and garlic powder to taste.
In a large bowl combine 1 Cup of cornstarch, and 1 T. baking powder.
Add the seasoned and cut-up chicken and toss with a fork to coat the chicken.
In a cast iron skillet on med-high add 4 T. vegetable oil and heat to lightly smoking.
Add the chicken and brown/cook quickly, about 5 to 10 minutes depending on how cold your chicken is among other things.
Remove the browned and lightly cooked chicken to a covered bowl.
Add onions, garlic, ginger, whole red peppers, red pepper flakes and saute lightly on medium-low heat with 1/4 C. of quadruple strength Better than Bouillon or equal.
Reduce and/or thicken with corn starch as desired.
Add the cooked chicken back into the skillet and coat with the sauce.
Serve with white rice.
Recommend increasing the sauce and thickening it slightly.
The recipe needs to be enlarged, it tastes pretty good. Allow 1/2lb chicken per person. Only about 3/4 lb of chicken fries well in a large skillet so you will need to fry two batches and add oil accordingly. The recipe above is for only about a pound and more sauce is needed too.
Serve with white rice.

Red bell pepper, carrot, cabbage, snow peas, and bean spouts could be added. A citrus such as orange or maybe lemon would be good.
