2 large tomatoes, chopped
1 serrano chile, seeded
4 c. cubed fresh watermelon, seeded
2 tsp. red wine vinegar
¼ c. extra-virgin olive oil
2 tbsp. red onion, minced
1 medium cucumber, peeled and chopped
¼ c. minced fresh dill, plus more for garnish
salt and freshly ground pepper
½ c. crumbled feta cheese

Directions:
Directions:
Puree the tomato, chile, and ½ of the watermelon. Add the red wine vinegar and olive oil and pulse. Add the onion, cucumber, dill, and season with salt and pepper. Puree the soup until smooth. Pour into chilled bowls and add the remaining watermelon. Sprinkle with dill and feta cheese.
