2# pork roast,
One Cup of each
Leeks
gr peppers
1 Clove of garlic, pressed
1 Tspsps of ginger, 1* fresh, gratt
Half cup of each
Sugar
Soy sauce
Dry sherry,
corn starch
Water
6 cups Vegetable broth
8 cups Hosisin sauce
1 cup *chilli sauce *
2 Cups of peanut oil

Freeze the pork for 30 minutes to make it easier slicing
Get out of the refrigerator the marinade
Clean the leek and trim off bottom
Cut the white and lt green part of the leek into thine slices (*like matchstickes) clean the peppers and juliienne
Combine seasonsings and set aside
Slice the meat into 1+1/2 inch long, jilliene
Heart the wok or other deep frying pan Add oil and heat to 350* Deep fry the pork until it'snot pink any more
Remove with a slotted spoon and let drain on a paper towels until no oil is left behind Remove all but 2 tbspsp of oil Stir in the seasoning mixture, stir-fry the leek and gr peppers The seasoning needs to thickened with corn starch Stir-fry for an additional 20-35 seconds
Serve With rice, Chinese noodles, fried rice or vermicilli noodles
