6 cups warm water
¾ cup olive oil
1⅓ cup honey
4 eggs
4 tablespoons yeast
2 tablespoons dough enhancer - optional
4 tablespoons lecithin - optional


1½ tablespoons of gluten - optional
2 tablespoons of salt
10 to 11 cups of flour

Directions:
Directions:
Mix the first seven ingredients. Add 10 cups of freshly milled flour in an electric mixer until mixed together. Then let it sponge for 15 minutes.

After it is sponged, add the last three ingredients. Mix in flour until the dough begins to pull away from the sides of the machine. Clean sides while mixing means there is enough flour. Let the machine knead the dough for 5 to 7 minutes. Remove the dough and shape it into loaf pans. Let rise for 30 minutes covered in a draft-free place or until doubled in size.

Bake for 27 minutes until 350 degrees.

I usually only make half a recipe because this makes 5 or more large loaves. We tend to eat smaller loaves as well.
