3 1/2 Kgs. beef (outside round) - cubed into 1/2 inch pieces
4 Medium kidneys - rough chopped
6 Onions - diced to 1/2 inch squares
2 Beer - heavy ale or stout
2 Litres beef stock
1 Tbsp. Dijon mustard
3 Tbsp. HP sauce (Lee and Perrin)
3 Tbsp. thyme
1 Tbsp. oregano
1 1/2 Tbsp. garlic powder
1 1/2 Tbsp. curry powder
2-3 Tbsp. seasoning salt
1 1/2 Tbsp. black pepper
6 Oxo cubes
1/2 Cup red wine )if desired)

Directions:
Directions:
Combine everything except i beer and 2 litres of beef stock.
Put in an oiled roasting pan on high heat in the oven until half cooked and reduced.
Add 1 litre of tock and cook about 1/2 hour, stirring frequently.
Reduce the gravy to the desired consistency.
Add remaining stock and beer, bring to a boil.
Make a flour and water slurry to the consistency of cream.
Slowly fold in thickening agent until consistency is like runny gravy.
Return to oven at 350 degrees for an hour and a half.
Cool and make pies.
