Pastitsio:
2 large red onions, finely chopped
½ cup butter (I use a couple 2 tbsp. of butter + rest olive oil)
2 ½ lbs lean ground beef
2 cans (8 oz. each) tomato sauce
2 tsp. salt
2 cloves garlic minced
1 stick cinnamon
1 pkg. (14oz.) large elbow macaroni
½ lb. grated parmesan/romano cheese (I use Italian blend cheese)

Custard sauce:
¼ cup butter
¼ cup flour.
3 cups milk
½ tsp. salt
⅛ tsp. nutmeg
⅛ tsp. pepper.
6 eggs

Cooking Instructions- Custard Sauce:
Melt ¼ cup butter and gradually blend with ¼ cup flour.
Stir in 3 cups milk, stirring, cook until thickened.
Add ½ tsp. salt, ⅛ tsp. nutmeg, and ⅛ tsp. pepper.
Beat 6 eggs until light and then stir the hot sauce mixture into the eggs.

Cooking Instructions- Pastitsio:
Saute onions in butter until golden.
Add meat, and cook until burned and crumbly.
Add tomato sauce, salt, garlic, and cinnamon stick.
Cover and simmer for 30 minutes until thickened.
Remove cinnamon stick.
Cook macaroni in a large pot of boiling, salted water (~12 minutes).
Rinse pasta under cold water.
In a buttered 9x13 pan, alternate layers of macaroni, meat sauce, and cheese.
Dust lightly with cinnamon.
Pour custard sauce over macaroni, finish with sprinkling of cheese.
Bake at 350 degrees for 45 minutes, until custard is set.
Cut in squares and cool slightly uncovered.
