- 1 lb raw walnuts
- 4 tablespoons and 1 tablespoon salt, or to taste
- ⅛ cup olive oil, or to taste

Soak raw walnuts in spring or filtered water (room temp) with sea salt over night - I don’t actually know how much salt is suggested, I open the big hole on the salt shaker and do a fair amount, maybe 4 tablespoons. Water should cover the nuts well. Stir, and let sit on the counter uncovered overnight

In the morning, pour into a colindar and rinse very well! I usually do half at a time to ensure this because I prepare a big batch

Pat dry with a towel

Spread on a baking sheet and bake on ovens lowest temperature (mine is 170) for 1.5 hours. Walnuts should have space, not be on top of each other. Stir or rotate the pans halfway through

Pour into a bowl, drizzle lightly with olive oil, and sprinkle generously with salt & mix! Leave the bowl uncovered. (We eat them fast enough it hasn’t been an issue.. I’ve found that putting a lid on traps moisture and they loose their crunch)

I had a friend bake these for me when I was postpartum with Meyer and they’ve now become a staple snack in our house. They pair deliciously with an aged cheddar cheese for a snack!
