- 4 sweet potatoes
- 1-2 lbs of ground beef or ground venison (I do two so we can have leftovers to freeze)
- 1 onion
- 3 cloves of garlic
- 1 bag frozen mixed vegetables
- 2 cups shredded sharp cheddar cheese

Directions:
Directions:
1. Cut sweet potatoes in half and rub with olive oil. Place on cookie sheet flesh side down and cook 30 mins at 415 (you could cook them in your casserole dish to save on number of dishes)
2. While potatoes bake, brown meat in skillet. Dice onion and garlic, and mix in with meat. Add seasoning of choice (I do garlic salt and pepper, sometimes throw in some Italian seasoning)
3. Coat casserole dish with oil and mush sweet potatoes along the entire bottom of pan. (Peel skin off or leave on, your choice)
4. Layer cooked meat, garlic and onion combo on top of potatoes.
5. Dump frozen veggies on top of meat
6. Top with shredded cheese
7. Put back in oven at 375 until veggies are cooked and cheese is melted. Usually like 15-20 mins.
