72 cups tomatoes (approx. 1 bushel) peeled and pureed
12 cups chopped onions
18 cups chopped peppers – (14 c. green, 1 c. jalapeno – ½ with seeds, 3 c. other peppers

Put in a large kettle and simmer for several hours, until all vegetable are soft.

Add:

3 cups vinegar
1 Tbsp pepper
3 Tbsp salt
3 Tbsp Chili Powder
2 Tbsp Garlic Salt


2 cups white sugar
4 cups brown sugar Mix together and add slowly to the boiling salsa
3 cups modified food starch

Bring to a boil. Ladle into clean and sterilized jars, leaving ½ head space. Adjust lids and process in a boiling water bath canner: 15 minutes at 0-1,000 ft, 20 minutes at 1,001-6,000 feet; 25 minutes above 6,000 feet.
