3 1/2 cups bulgur wheat
1/3 cup red onion, chopped
3 mini cucumbers
1/2 cup fresh Italian flat-leaf parsley, chopped
1/2 cup fresh mint, chopped
1/2 cup pistachios, coarsely chopped
2 cups chickpeas, drained
3 tablespoons lemon juice
1/4 cup extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup feta, crumbled, plus more for serving

Directions:
Directions:
Cook the bulgur wheat according to the package. Cool and fluff the bulgur wheat. Pour the red onion into a bowl of cold water. Let the onion sit in the water for 10 minutes. This will help reduce its natural bite. Drain the onions. Toss the wheat, onion, cucumber, parsley, mint, pistachios, chickpeas, lemon juice, olive oil, salt, pepper, and feta cheese. Top each serving with more feta cheese.
