Brown Butter Carrots Recipe

6 whole rainbow carrots (regular carrots work too)
2T. olive oil
1 1/2T. sage
4T. sliced almonds
4T. butter

Directions:
Directions:
Trim and peel carrots. Cut lengthwise into strips 3" long. cut each piece lengthwise into fries 1/4" thick. Place carrots in a bowl and drizzle with olive oil. season with salt and pepper. Stir to coat. Spread carrots out on foil lined baking sheet. Roast 18-20 minutes or until fork tender. Stir halfway through.

Place butter in large sauté pan over medium heat. Cook 1-2 minutes or until butter is fragrant and begins to brown, swirling it frequently. *Remove from heat. Add sage, and sliced almonds. Transfer brown butter to bowl used to season carrots.

Transfer roasted carrots to bowl with brown butter. Toss to coat. Season with salt and pepper to taste.
