2 LB ground beef (85%)- I like to use a combination of pork and ground beef
1 medium onion ( chopped fine)
2 eggs
2-3 cloves garlic
1 ½ Italian seasoning
4 T. ketchup
⅓ C milk
3/4 C bread crumbs- I like to use Panko
3 T fresh parsley (chopped fine)
Salt & Pepper to taste
½ tsp. Paprika


Meatloaf sauce:
1 C ketchup
1 ½ white vinegar
2½ brown sugar
1 tsp garlic powder
½ tsp onion powder
¼ black pepper
¼ salt

Mix all ingredients in a small bowl.

In a large bowl mix all the ingredients, and mix well.

Spray a loaf pan with non-stick spray and line with parchment paper. Add meat to loaf pan and press down to shape evenly.

Bake at 375º for 40 minutes.

Remove meatloaf from oven and spread meatloaf sauce over the top. Return to oven for an additional 20 minutes. Internal temperature should be 160º.

Let rest for 10 minutes.

Serve with mashed potatoes and green beans.
