2lbs. dried black beans
½ tsp canning salt per pint jar
1Tbsp fresh cilantro per pint jar
1 Tbsp lime juice per pint jar
1 fresh garlic clove per pint jar
1 Chipotle in Adobo per pint jar

Soak beans. Rinse, add back to pot and fill with water until covered by 2 inches.
Bring to a boil. Fill hot jars to 1 ½ inch headspace with beans. Add remaining ingredients to each jar. Add cooking liquid leaving 1” headspace.
De-bubble, wipe rims, center lid and add rings to fingertip tight. Pressure can pints for 75 mins, adjusting for altitude. Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool, dark place.
