For the meatballs:
1 lb. chopped meat
4 slices white bread
basil/oregano to taste
1/2 cup parmesan cheese
1 egg
salt/pepper
olive oil, 2 Tbsp.

For the soup:
1 Tbsp. olive oil
1 onion, diced
1 large carrot, diced
2 stalks celery, diced
3 garlic cloves, chopped
8 cups chicken broth
1-2 cups acini pasta
1 cup baby spinach, chopped

Directions:
Directions:
1. Mix all ingredients for meatballs except olive oil. Roll into small balls, and fry in olive oil. Set aside.
2. In large pot, heat olive oil. Saute onions, carrots, and celery till tender. Add garlic, and cook for another 30 seconds.
3. Add chicken broth to pot, and bring to a boil.
4. Add pasta and meatballs; reduce heat to medium and cook for another 10 minutes.
5. Stir in spinach, and cook until spinach wilts.
6. Season with salt/pepper
