1 cup Oil
2 cups Brown Sugar
2 tsp Vanilla
2 cups Zucchini
3 cups Flour **
1 tsp Baking powder
1/2 tsp Baking soda
1 can 8 ozs Crushed pineapple, drained
2 cups Coconut flackes, divided
1 cup Chocolate chips.

Directions:
Directions:
In a meat grinder grind zucchini.
Drain on paper through the top until no moisture remains.
In a mixing bowl beat eggs, sugar and vanilla until dough forms and pulls away from the the sides.
Add oil and zucchini.
Add all ingredients together and beat until dough pulls away from the sides of the bowl and a dough forms.
Pour into greased baking dish or pan.
Bake 22-28 minutes for muffins for loaves one hour or until a toothpick in middle comes out clean.
Cool to room temperature on wire rack.
Cut and serve with cream cheese or butter.
After that store in sealed container at room temperature.
Then in a sealed container and refrigerate for 30 days in the refrigerator.
Next freeze for up to one year.
