Ingredients: 1 1/2 cups flour 2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 tsp cinnamon 1 1/3 cups sugar 2/3 cup oil 3 eggs 1/2 tsp vanilla extract 2 cups shredded carrots 1 cup walnuts (optional)
Frosting: 2 (8-oz) packages cream cheese (softened) 1/2 cup butter (softened) 1 (16 oz) box powdered sugar 1 tsp vanilla extract

Directions:1. Preheat oven to 350 degrees 2. Sift dry ingredients together 3. Beat sugar and oil until mixed well 4. Add eggs one at a time, beating until blended after each addition 5. Beat in vanilla extract 6. On low speed, add flour mixture, beating until just blended 7. Stir in carrots and 1 cup walnuts 8. Pour batter into pans sprayed with Pam (You can also line the pan bottoms with parchment paper) 9. Bank for 30 to 35 minutes or until a toothpick inserted in the middle comes out clean. 10. Cool pans for 10 minutes and then remove to continue cooling on wire racks
Frosting: 1. Beat cream cheese and butter until smooth and fluffy 2. Gradually beat in powdered sugar 3. Beat in vanilla extract 4. Optional: You can press the remaining 1 cup of walnuts long the bottom of the cake going about 2 inches up. |
