2 ½ cups flour
½ cup sugar
1 ½ tsp. baking powder
¾ tsp salt
½ tsp baking soda
½ cup softened unsalted butter
1 cup raisins
1 Tbsp caraway seeds
1 large egg
1¼ cups buttermilk
¼ cup sour cream

Directions:

1 Preheat oven to 350. Butter a 9-inch round cake pan or dish

2. Sift together the dry ingredients. Using a food processor with a steel blade, or a pastry cuter, cut the butter into the flour mixture until it resembles small peas. Blend in the raisins and caraway seeds.

3. Beat the egg, buttermilk and sour cream together until blended

4. Stir the egg mixture in to the dry ingredients just until blended-do not over beat.

5. Transfer the batter to the pan and bake for about 50-55 minuted or until a toothpick inserted in the center comes out clean.

(plain yogurt can be used in place of sour cream if desired)

This has been our traditional St. Patrick's day breakfast for many years. It tastes just as good the next day and typically lasts at least a week.
