2 sheets puff pastry, thawed
1 lb chicken breast fillet, cubed into small pieces
8 ounces ricotta cheese
6 ounces baby spinach leaves
8 cloves garlic crushed
1 medium onion chopped
salt and pepper to taste

Directions:

Chicken with Spinach and Ricotta Cheese Mixture
1) Heat 1 tablespoon olive oil in a frying pan.
2) Add crushed garlic and chopped onion, cook for 2 minutes.
3) Add the cubed chicken breast fillet and stir-fry until meat changes color.
4) When chicken is cooked, add the spinach leaves until it wilts in the heat.
5) Transfer the cooked chicken and spinach in a bowl (make sure there’s no water included) and mix in the ricotta cheese.

Puff Pastry
1) Pre-heat oven 400 degrees
2) Place pastry sheets on baking paper.
3) Spread the Chicken with Spinach and Ricotta Cheese mixture over each pastry sheet, leaving a 1 inch border on all sides.
4) Using the baking paper to assist, roll up each sheet like a Swiss Roll.
5) Glaze with beaten egg (1 egg beaten with 1 tbsp of water).
6) Place the rolls on a slightly greased baking tray.
7) Bake for 20 minutes or until golden.
8) Let it cool and serve.
