2 cups Tigernut flour
1/4 tsp Baking soda
1/2 tsp Himalayan salt

¼ cup maple syrup
¼ cup lemon juice
¼ cup avocado oil
1 Tbsp lemon zest or a few drops of lemon oil
2 Eggs

Prepare a loaf pan with spray and parchment paper (the parchment paper will help the loaf out of the pan)
Pre heat oven to 350º

Combine dry ingredients in a separate bowl
Combine wet ingredients in another bowl
Pour wet into dry and stir well.
Add additional ingredients*

Pour into prepared pan, bake 35-40 degrees or until a toothpick is clean.

*Additional ingredients - Blueberries, chocolate chips, nuts (walnuts, pecans...)

A friend share this recipe with me from instagram from @healthynumnumblog Since I am allergic to the original ingredient almond flour, I wanted to try Tigernut flour. If you've never baked with Tigernut flour it is a tuber not a nut.
It is low in carbohydrates, and high in fiber and antioxidants.
It can possibly help with reducing blood sugar and weight loss.
It is vegan, keto and paleo.
This flour already has a slight sweet nutty flavor to it.

This is my favorite flour to cook or bake with. You can find it in Amazon.
