½ c. melted butter
1 c. sugar
2 eggs
¼ tsp. almond extract
1½ c. milk
2 T lemon basil leaves, finely chopped
2 T baking powder
1 T lemon peel
2 T lemon juice
3 T lemon juice (for glaze)
2 T sugar (for glaze)

Preheat oven to 325º. In a bowl, blend together the butter and the cup of sugar. Beat in the eggs, one at a time. Stir in almond extract. Combine the flour and baking powder and add to egg mixture, alternating with milk. Fold in the lemon basil leaves and lemon peel and add lemon juice. Turn batter into a greased 8½ x 4½ greased loaf pan. Bake about 60 minutes, or until the loaf tests done in the center. Remove loaf from oven and place on a rack to cool. Meanwhile, mix together the remaining lemon juice and sugar in a small bowl for the glaze. Prick the top of the baked lemon bread with a form in several places, then pour the lemon and sugar mixture over the loaf.

I make three small loaves in small loaf pans and bake about 45-50 minutes. Watch carefully to see that it doesn’t over bake.
