3 or 4 Peppercorns
1 Bay leaf
Orange peel
¼ tsp Vanilla
1 cup Water
1 cup Sugar
12 oz Cranberries, rinsed and sorted

Directions:
Directions:
Make a cheesecloth “bouquet garni” with the peppercorns, bay leaf, and orange peel.
Bring water and sugar to a boil, stirring until sugar dissolves. Add Cranberries, Vanilla, and Garni, stirring occasionally until berries pop, about 10-12 minutes.

As soon as the cranberries appear in the stores, I start making my cranberry sauce. It not only goes with our Thanksgiving meal, but with chicken, pork chops. Can be used as a “Chutney”.
