2 tbsp. Olive Oil
1/2 c. Green Onions, finely chopped
1/2 c. Green Bell Pepper, finely chopped
3 (6 oz.) cans Bumble Bee White, Pink or Lump Crabmeat, press drained
6 oz. Ritz Crackers, crushed
1 tbsp. Mayonaise
2 tbsp. Dijon Mustard
1 tbsp. Lemon Juice
1 tbsp. Garlic Powder
1/2 tsp.Ground Cayenne Pepper (Optional)
1/2 tsp. Old Bay Seasoning
1/2 tsp. Salt, or to taste
1/4 tsp. Black Pepper, or to taste
1 c. Panko, or regular, bread Crumbs
1/2 c. Canola Oil, or as needed for drying

Directions:

Heat 2 tbsp. olive oil in large skillet over medium-high. Saute' green onions and bell peppers until tender. Set aside to cool slightly.

In large bowl, stir to combine all ingredients except Panko bread crumbs and Canola oil. Form into ten 1/2" thick patties.

Place bread crumbs in shallow bowl and press patties in bread crumbs to coat liberally.

Heat Canola oil in large skillet over medium-high.Cook patties until golden brown, approximately 1-2 minutes on each side. Drain on paper towel lined plate and serve hot.
