"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
6 to 7 lb beef roast
1 tbsp Montreal steak spice
2 tbsp onion soup mix
3 tbsp soya sauce
1 cup water

Directions:
On Saturday, bake your frozen roast in 1½ inches of water for 6 to 7 hours at 350º F. Remove from oven. Cool. Slice and place in a pretty glass 9x13 baking pan. Strain meat stock into your gravy pot and refrigerate.

Sunday morning, mix the 4 ingredients and pour over the sliced roast. Cover tightly with foil. Heat through for 2½ hours at 225º or 45 minutes to an hour at 350º. Set your pan into a serving basket and presto, no mess after church.

I have used the same method for pork roast, or used Montreal steak spice and chicken soup base on a roasting chicken.
