2 tablespoons olive
2 medium yellow onions, finely chopped
2 jalapeño peppers, seeded and finely chopped
2 poblano peppers, seeded and finely chopped
2 Anaheim peppers, seeded and finely chopped
1 tablespoon ground cumin
1½ teaspoons chili powder
¾ teaspoon smoked paprika
½ teaspoon cayenne pepper
6 garlic cloves, minced
2 tablespoons all-purpose flour
4 cups chicken stock
2 can Cannelini beans, rinsed, drained, and divided
1 can Northern White beans (or whatever other bean you have on hand - this is just
my preference)
3 cups chopped cooked chicken
Optional toppings: Shredded cheese, sour cream

I begin by cooking the chicken. I use one large breast simmered in water which I then use later for my chicken broth. Shred the chicken breast when done and set aside.
Heat the oil in a large Dutch oven over medium heat until it is shimmering. Add the onions, peppers, cumin, chili powder, paprika, cayenne and cook until vegetables have softened.
Stir in the garlic and cook for another 30 seconds.
Add the flour, stir until no raw flour remains, then cook until it begins to emit a nutty aroma.
Stir in about half of the chicken stock and 1 can of Cannelini beans. With a potato masher, mash the beans for a creamy, thick texture.
Stir in the remaining chicken broth. the additional beans and the shredded/cubed chicken.
Bring to a simmer and cook for 20 minutes, stirring occasionally.
You may think it is far too juicy, but if you turn off the heat and let it sit for about an hour, the flavors meld and it thickens up nicely.

If you don't have all the above spices, all is not lost - just add in a packet of chili seasoning, or even taco seasoning. It also helps thicken your stew.
Also, do not dispair if you don't have 3 kinds of peppers. Variety is nice but not essential. Jalepenos are probably the most traditional however, if you have to choose one.
