2 tsp olive oil
1/2 onion, diced
1 garlic clove, minced
2 tbsp minced green pepper
3 tbsp chopped cilantro
1 (15 oz) can black beans with liquid
1/2-1 cup water
1 bay leaf
1/8 tsp cumin
1/8 tsp dried oregano
1 tsp red wine vinegar
1/4 tsp salt
1/4 tsp freshly ground pepper

Directions:
Directions:
In a medium saucepan heat olive oil over medium heat. Add onion, bell pepper, garlic and cilantro. Sauté about 3 minutes. Add the rest of the ingredients, starting with the black beans and only 1/2 cup water. Bring to a boil, then turn down to low and cover. Stir occasionally and add extra water as needed so the beans do not dry out. Continue to cook on low for about 30 minutes until spices meld, then remove bay leaf before serving.
