8 lb seedless watermelon, chilled and cut into chunks (about 12 cups)
1/4 cup olive oil
3 whole limes, juiced
1-1/2 tsp salt
3/4 tsp pepper
1 cup fresh mint leaves, chopped
1-1/2 cups crumbled feta cheese

Directions:

Prepare just before serving.
Chop watermelon into chunks and place pieces into colander to drain.
In a small bowl, whisk together olive oil, fresh lime juice, salt, and pepper to make the dressing.
Place watermelon in a large salad bowl. Pour dressing and chopped mint over the watermelon and toss gently to coat. Pour crumbled feta on the salad and stir gently to incorporate the cheese into the salad. Serve immediately.
