Sheet Pan Meatballs Recipe

1 medium potato finely grated (½ to ¾ cup)
1 lb lean ground beef
1 lb. Italian sausage or ground pork
1 large egg beaten
½ cup finely grated Parmesan cheese finely grated (optional)
1 tsp salt (optional)
additional seasoning of choice ( if using ground pork)

Directions:
Directions:
Put all ingredients in a medium bowl. If using sausage remove and discard the casings. Using clean hands gently mix until evenly distributed. Do not over mix.
Using moist hands roll mix into meatballs about 1 inch in diameter- about 1 ounce.

To serve immediately:
Pre heat the oven to 400ºF
Arrange meatballs on a foil lined sheet pan that has sides. Bake until lightly browned and cooked through, about 25 minutes. Turn the meatballs once while cooking.

To freeze:
Line a sheet pan with parchment paper
Roll meat balls as above and place on pan. Freeze on the pan for about 1 hour or until firm.
Transfer to an air tight container or a zip lock bag. Will keep up to 3 months.
To cook place the frozen meatballs on a sheet pan and bake.as above.

Makes about 3 dozen meatballs.
I use Italian seasoning or oregano or thyme and a little paprika to season if using pork.
If not using parmesan cheese add some finely chopped onion and or garlic to the meat mixture.
