A-to-Z Ingredients: Apples, peeled and shredded Pears, peeled and chopped Applesauce Pineapple [canned], crushed/drained. Apricots [dried] chopped Prunes, pitted and chopped. Bananas, mashed Pumpkin, canned Carrots, shredded Raisins Coconut Raspberries, unsweetened, fresh or frozen Dates, pitted and chopped Rhubarb, chopped, fresh or frozen. Figs [dried] chopped Strawberries, fresh or frozen Oranges, peeled and chopped Sweet Potatoes, cooked and mashed Peaches, peeled and chopped Zucchini, peeled and grated.

Directions:In a mixing bowl, combine the sugar, oil and eggs; mix well. Stir in A-to-Z ingredient of your choice and the vanilla. Combine flour, cinnamon, baking powder, baking soda and salt; stir into liquid ingredients just until moistened. Stir in nuts.
Pour into two greased 8-in x 4-in x 2-in loaf pans. You can use a bundt pan but be sure to grease generously as it may stick.
Bake at 325 for 55-65 minutes* or until a wooden pick [I use shish kabob stick] inserted near the center comes out clean.
Cool in pan 10 minutes before removing to a wire rack.
*I turn the pans around halfway through—about 30 minutes. |
