4 Portabella Mushroom Caps
3 tbsp. Olive Oil, divided
1 tsp. Italian Seasoning
¼ c. Pizza Sauce
½ Mozzarella Cheese
2 cloves Garlic, minced
28 sliced Pepperoni
- Baking Spray

Directions:
Directions:
1. Heat oven to 400º F. with rack set in upper-middle position.
2. Remove stems from mushrooms. Using a dinner spoon, scrape out dark gills from inside mushroom caps.
3. Brush insides and outsides of mushrooms with 1 tablespoon of oil then season with salt and pepper.
4. Arrange mushrooms, gill side up, on a baking sheet and roast until tender and beginning to brown, about 15 minutes.
5. Flip mushrooms, discard any accumulated juices, and roast until mushrooms are brown and slightly dry, about 5 minutes more.
6. In a small mixing bowl, mix together the 2 tablespoons olive oil, Italian seasoning and garlic.
7. Spread the mixture on the portobello roasted mushrooms.
8. Add the pizza sauce on top, followed by the mozzarella cheese and then the sliced
pepperoni.
9. Bake for 8-10 minutes in the preheated oven until the cheese melts and is lightly browned.
10. Enjoy immediately
