Ingredients: 1.6oz self raising flour
2.6oz sugar
3.6oz marg or butter
4.3 eggs
5.1 teaspoon baking powder
6.2-3oz cocoa powder (but adjust this according to how strong you want the chocolate flavour to be)
7.2 teaspoon vanilla essence
For the icing
1. 4oz margarine or butter softened
2. 2oz cocoa powder
3 3oz icing sugar

Directions:1.Grease really well 2 sandwich tins or line with parchment paper
2.Put oven to 180º
3.Add all ingredients to a food mixer and mix really well. It should be firm but not dry or runny so add more flour accordingly or a little milk.
4.Divide mixture between the tins and smooth the top.
5.Cook for about 30 minutes until firm on top
6.Leave in tins for 10 minutes to cool slightly then remove and put on a wire rack to completely cool before icing.
7.For the icing mix together the ingredients mashing with a fork until smooth. You can adjust the cocoa powder according to taste.
8. Spread one underside of the cakes then place the other one on top.
9. Spread the top with icing sugar or decorate with your choice. You can put some of the icing on top and add decorations to make it fancy. |
