6 strips bacon
3 tablespoons butter
1 medium onion, chopped
3 cloves garlic
1/3 cup all-purpose flour
2 pounds potatoes, peeled and diced
4 cups chicken broth
2 cups milk
2/3 cup heavy cream
1 1/2 teaspoons salt
1 teaspoon pepper
1/4 - 1/2 ancho chili powder
1/2 cup sour cream
Garnish-cheddar cheese, chives, green onion, more sour cream and bacon bits

Directions:
Directions:
Place bacon strips in pan you are going to prepare soup. Cook until crisp. Remove bacon, leaving bacon drippings in pan. Add butter, onions and garlic. Saute for about 30 seconds. Sprinkle flour over ingredients in the pot an stir until smooth. Add diced potatoes, chicken broth, milk, heavy cream, salt, pepper and ancho chili powder. Stir.
Bring to a boil and cook until potatoes are tender. May puree or mash part of the soup.
Allow soup to simmer 15 minutes Top with sour cream, bacon. cheddar cheese, onion or chives.
