1 6oz self raising flour
2.6oz sugar
3.6oz marg or butter
4.3 eggs
5.vanilla essence 2 teaspoons
6.1 teaspoon baking powder
7.Tub of whipping cream or use double
8.Jam
9.Icing sugar

Directions:
Directions:
1. Put all the ingredients in a food mixer and beat everything together until really smoooth. It should be firm not sloppy so add more flour if too runny or a little milk if too dry.
2. Grease 2 sandwich tins or line with baking parchment and put the oven on to 180º
3. Divide the mixture equally between the two tins and smooh down with a knife.
4. Cook for 30 minutes or until firm on top.
5. Leave in tins for 10 minutes then carefully remove and cool on a wire rack.
6. Spread half with jam and the other half with whipped cream or butter cream (butter
vanilla essence and icing sugar)
7. Sandwich together and sprinkle the top with icing sugar.
