2 medium apples, peeled and diced (about 2 cups)
1/2 c. vegetable oil
1 c. sugar
2 eggs
4 1/2 tsp lemon juice
2 c. flour
1/2 tsp baking powder
1 tsp. baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/2 c. chopped pecans or walnuts (optional)

TOPPING:
1/4 c. brown sugar
3 T flour
2 T softened butter
1/4 c chopped pecans or walnuts

Directions:
Directions:
Preheat oven to 350º. Line a 9 x 5 loaf pan with parchment paper
In medium bowl mix together, apples, oil, sugar, eggs and lemon juice. Fold in the dry ingredients, mix. Put in loaf pan and sprinkle topping over the batter.

Bake for 55-60 minutes or until toothpick inserted in the bread comes out clean.
Let bread cool in the pan for about 10 minutes. invert loaf on cooling rack and remove from pan.
Store in an airtight container.
