2 cups (around 1-pound) dried white beans (great northern or navy)
1 large onion, diced
2 potatoes, diced
2 celery stalks, diced
4 garlic cloves, minced
8 cups vegetable broth


1 bell pepper (any color), diced
1/4 cup parsley, chopped
3 cups spinach or kale, chopped

Directions:
Directions:
Combine the dry white beans, onion, potatoes, celery, garlic, and vegetable broth into an Instant Pot. Cook on high for 50 minutes, then do a manual release on the Instant Pot.

Add in the bell pepper, parsley, and spinach or kale and stir well. Put the lid back on the Instant Pot to allow the bell pepper to soften and the spinach and parsley to wilt, about 10 minutes.

With an immersion blender, blend about half of the soup so it's a mixture of creamy and chunky consistency.

I came across a Senate Bean Soup recipe that sounded delicious. I read an article stating the Capitol Hill has a hearty and easy bean and ham soup on their menu every single day for many decades. In fact, some form of Senate Soup has been on the menu every single day for 110 years except for one isolated day during World War II as it was unavailable due to food rations. The pictures of this soup reminded me so much of the comforting Campbell's Bean with Bacon soup I used to eat and love as a young kid. Fortunately, I now know how to create flavors to taste just like the older, unhealthy versions of food I used to eat. After a lot of playing with various ingredients I have the soup down to a recipe that I enjoy most.
