1 whole lemon*
4 eggs
1 cup sugar
5 Tbsp butter-softened, not melted
1 one unbaked pie shell

*Marcy found that lemons with a thinner rind are amazing!

Directions:
Directions:
Cut off the ends of the lemon and liquefy in blender.
Combine lemon with remaining ingredients and mix well.

Pierce pie crust with a fork and bake at 400 for 7 minutes. Reduce oven to 350.
Pour lemon mixture into pie shell. Bake for 18 to 22 minutes until filling is firm.
Cool completely before serving.
