6 boneless chicken breast, skin on
8-10 ounces garlic and herb goat cheese
6 large basil leaves
Good olive oil
Kosher salt and freshly ground pepper

Directions:

Preheat oven to 375

Place chicken breast on sheet pan. Loosen the skin from meat with your fingers, leaving one side attached.

Cut goat cheese into 1/2 inch thick slices and Place 1 or 2 slices plus large basil leaf under the skin of each chicken breast.

Pull the skin over as much of the meat as possible so chicken won't dry out

With your fingers rub each chicken breast with olive oil and sprinkle with salt and pepper.

Bake for 35 to 40 minutes, until skin is lightly browned and chicken is just cooked through.
Tent for 10 minutes

Serve hot or room temperature
