700g white fish
570ml milk
110g butter
50g plain flour
110g prawn
2 hard boiled eggs roughly chopped
3 tablespoons chopped fresh parsley
1 tablespoon capers drained
1 tablespoon lemon juice
Salt and pepper

For the topping
900g boiled potatoes
50g butter
4 tablespoons milk
A little freshly grated nutmeg
25g cheddar cheese grated

1: preheat the oven to 200ºC

2: start by arranging the fish in a baking tin and seasoning it with salt and pepper.Then pour over half of the milk, dot with 25g of butter in flecks, and bake in the oven for 15 -20 minutes.Then pour off (and reserve) the cooking liquid, and remove the skin from the fish flaking the flesh into fairly larger pieces.

2: Now make the sauce: melt the remaining butter (75g) in a saucepan then stir in the flour and gradually add the fish cooking liquid stirring well after each addition.When all the liquid is in finish of the sauce by slowly adding the remaining milk and seasoning with salt and pepper.

3: Next mix the fish into the sauce, along with the prawns hard boiled eggs, capers and parsley and stir in the lemon juice, Now pour the whole mixture into a well buttered 2½ baking dish .

4: Next cream the cooked potatoes with the butter and milk, add some salt, pepper and freshly grated nutmeg, then spread the mixture evenly over the fish. Smooth the surface of the potato then sprinkle the cheese all over and bake on a high shelf for about 30-40 minutes, or until heated and brown
