750g jersey royal potatoes washed and halved
15g pack of rosemary
15g chopped chives
10g chopped parsley
4 whole garlic cloves crushed with blade of knife
4 shallots peeled and sliced finely
100ml olive oil
2 heaped tbsp whole grain mustard
1tbsp white wine vinegar
Salt and pepper
1tbsp horseradish

Directions:
Directions:
1: combine potatoes, the rosemary and garlic in a saucepan cover with water and a teaspoon of table salt. Bring to the boil and reduce to a simmer, Cook until soft (approx 20 mins).

2: Meanwhile cook shallots gently in olive oil for 5 minutes and set aside when the potatoes are done drain them, removing the rosemary and garlic.Place the potatoes in a bowl ,pour the over the shallot olive oil mixture , add the whole grain mustard and vinegar and crush with fork or balloon whisk. Generously season with salt and ground pepper.Stir in the chopped herbs into the potatoes .

3: serve warm or cold with a tablespoon of horseradish stirred through
