3 celery stalks, cut into 1/2-in. pieces (about 1/2 cup)
2 large carrots, cut into 1/2-in. pieces (about 1 cup)
1 small yellow onion, cut into 1/2-in. pieces (about 1 cup)
3 garlic cloves, chopped (about 1 Tbsp.)
2 cups of cooked chopped ham or 1 one large meaty ham bone
6 cups chicken stock
1 can Great Northern beans, rinsed
1 tsp cumin
1 tsp dried thyme
1 1/2 tsp. kosher salt
1/2 tsp. black pepper

Directions:
In a large soup pot, heat olive oil over medium heat. Add onion, celery and carrot and cook for about 5 minutes until onion is tender. Add garlic, chopped ham (or ham bone), and the broth. If you don't have a ham bone, just skip it. Bring to a boil and lower heat to medium. Let cook for about 30 minutes. Add the rinsed beans, cumin, thyme and season with salt and pepper. Continue cooking for another 30 minutes. Remove the ham bone.
