1 c cubed cooked ham
3/4 c onion
1 garlic clove, minced
Olive oil
2 c chicken broth
2 tbsp fresh parsley, minced
1/2 tsp salt
1/4 tsp thyme
1/8 tsp ea cayenne, chili powder, pepper
1 bay leaf
2 c uncooked rice
1 # cooked shrimp

Directions:
Directions:
Cook ham, garlic, and onion in oil until onion is tender. Stir in broth, tomatoes, parsley and seasoning. Boil, stir in rice. Reduce heat and cover. Simmer for 15-20 minutes. Add shrimp, heat through. Remove bay leaf and serve.
