2 chicken breasts cooked and diced
SALAD:
1 8 oz bag spring greens
1 pint cherry tomatoes sliced in half
1 1/2 red onion sliced into rings
1 c toasted pecan halves
1 2 1/2 oz bag apple chips, or make own
6 ounces feta cheese crumbled
1 1/2 c dried cranberries
DRESSING
2 1/3 cup olive oil
2 tablespoons white balsamic vinegar
2 tablespoons apple cider vinegar
2 -3 garlic cloves finely diced
3 teaspoons Dijon mustard
3 tablespoons honey

In a large salad bowl, add the spring greens, chicken, tomatoes, red onion, toasted pecans, and apple chips. Top with feta cheese and dried cranberries.
In a small bowl, whisk together the olive oil, white balsamic vinegar, cider vinegar, garlic, dijon mustard, and honey.
Pour the dressing over the salad and gently toss to coat the salad ingredients.

3 large sweet crisp apples, such as Honeycrisp, Fuji, Jazz, or Pink Lady
3/4 teaspoon ground cinnamon
200º spread on 2 sheets. Sprinkle with cinnamon. Bake upper and lower racks for 1 hour. Switch pans and bake another 1 1/2 hours.
