Ingredients: Hearty Soup Mix (recipe makes about 12½ c.) 1 pkg. (14 oz.) dry green split peas 1 pkg. (12 oz.) pearl barley 1 pkg. (14 oz.) alphabet macaroni 1 pkg. (12 oz.) lentils 1½ c. brown rice 4 c. minced dried onions (Option - don't include minced onions and add fresh chopped onions to the soup stock with the other vegetables and meat.)
Hearty Soup Stock 6 c. water 1⅓ c. Hearty Soup Mix (above) 1½ tsp. salt 2 carrots, chopped 1-2 stalks celery, chopped 1½ c. shredded cabbage 2 cans (15 oz.) tomato sauce 1 can (24 oz.) vegetable juice cocktail 1 lb. cooked ground beef or leftover meat (optional)

Directions:For the Hearty Soup Mix, combine ingredients in a large airtight container and mix well. Label the container and store it in a cool, dry place. The mix should be used within 6 months.
For the Hearty Soup Stock, put the water in a large pot or Dutch Oven. Add the soup mix and salt. Bring to a boil. Cover and simmer for 1 to 1½ hours, or until ingredients are nearly cooked. Add carrots, cabbage, tomato sauce, and vegetable juice cocktail. Add cooked meat with onions, if desired, and simmer for 20 to 30 minutes until the vegetables are tender. |

Notes: This is a very versatile mix soup. You can vary the recipe with any ingredients you have available. I have used sausage, (link or bulk), then left out the cabbage. It's great to take camping, and with minimal effort and time, you have a hearty warm soup for the campfire.
