1 cup cold, cubed butter
1 cup dark brown sugar
1/2 cup granulated sugar
2 large eggs
2 egg yolks
2 tsp vanilla

Dry ingredients
2 1/2 cups AP flour
1 1/2 cup cake flour
2 tsp cornstarch
I tsp baking soda
1 tsp salt

4 cups chocolate chips (or chocolate chunks, milk or semi sweet)

Preheat oven to 400º

Cream cold butter 30 seconds. Add sugars and cream again until light & fluffy.
Then add eggs, egg whites & vanilla.

Then add salt, corn starch, baking soda & part of your flour. Mix to combine. Then gradually add in rest of flour just until combined on low.
Then add chips.

Measure cookies to 5.7 ounces. Don’t roll them. They need to be craggy. (It only makes 11 cookies)

Bake at 400º for 12 minutes only.
Only about 4-5 fit on a cookie sheet.
