¼ to ½ lbs ground beef
2 carrots diced to ¼ inch pieces
2 stalks of diced celery same size as carrots
1 large sweet onion diced
4 minced garlic cloves
¼ c grated Parmesan or Gruyere Cheese (optional)
1 24 oz container of microwave mashed potatoes or you may make your own. (I used Publix traditional mashed potatoes)
Emeril's Essence seasoning
1 tblsp dried Thyme
1 tblsp dried Parsley
Salt and Pepper to taste

Brown the ground beef, set aside
In a separate pan, saute the onions, carrots, celery for about 8 - 10 minutes, until they are soft. Just before they are finished, add the garlic for about 1 minute
Combine browned beef and vegetable ingredients together, preferably in a 9 inch cast iron skillet.
Add the seasonings. Mix well.
Prepare the mashed potatoes and add butter ( If using prepared microwave potatoes, add 4 oz of butter; if using home made potatoes, add 8 oz of butter.) Add cheese
Top the mixture with the mashed potatoes. Smooth them out.
Bake 30 - 40 minutes at 350º.
Top with fresh parsley or finely chopped green onions and serve directly from the cast iron skillet.
